Who doesn’t love avocados!? In this yummy recipe they are paired with limes to create a fresh, healthy dessert that you don’t have to feel bad about! This dessert is sure to impress your friends with its smooth creaminess and fresh flavor! Also, parfait just sounds fancy! If you want to make this even healthier, you can choose to use all low fat ingredients.
Here’s what you’ll need:
- 2 Avocados of course
- 1 Large Lime (Juiced)
- 6 graham crackers
- 3 tablespoons of butter (Melted)
- 1/4 teaspoon of cinnamon
- 1 fourteen ounce can of sweetened condensed milk
- 1 eight ounce tub of whipped cream cheese
- 1 teaspoon of vanilla extract (x2)
- 1 eight once container of plain Greek yogurt
- 1 tablespoon of sugar (or other sweetener of your choice)
Now lets get started!
First, break up your graham crackers and blend them in a bowl with your butter and cinnamon until they are crumbly.
Now, blend together your peeled avocados, condensed milk, cream cheese, lime juice, and vanilla. Make sure you blend until its nice and smooth.
In another smaller bowl, mix together sugar, yogurt, and another teaspoon of vanilla.
You’re almost done! Now just get out some cute little cups and add a layer of your graham cracker mixture, your avocado mixture, and then your yogurt mixture. Sprinkle a little more of your graham cracker crust on top. Either serve now or chill.
If you want to get really fancy you can put some lime zest on top too!
